Glass Tree Biscuits

These stunning Christmas ginger biscuits are delicious to eat or hang them as decorations on the Christmas tree.

To make 28 glass biscuits, you’ll need:
Gingerbread dough
Star, heart or other cookie cutters
Clear, brightly coloured, good-quality boiled sweets
Silver or gold thread ribbon


Heat the oven to 190 degrees C/Gas Mark 5. Roll the dough to 4mm thick, and cut out star, heart or other seasonal shapes using cookie cutters. Then cut a small area (at least 3cm big) in the middle of each biscuit using a smaller, same-shaped cutter. If you want to use the biscuits as decorations, pierce a separate threading hole at the top of each one.
Place the biscuits on a baking sheet lined with baking parchment, and put half a boiled sweet, broken into small pieces with a rolling pin, into each central hole. Bake for 5 to 8 mins, until lightly browned, checking regularly.
Neaten up the ribbon hole when you take the biscuits out of the oven, and leave them to cool on the baking parchment. When cool, thread ribbon or string through the hole and hang on the Christmas tree or in front of a window to catch the light.
