Invasion of the Bug-eyed Spiders

If you’re looking for something different to give your trick or treaters this Hallowe’en, try these spooky red five-eyed spiders.

Makes 12
1 quantity of two-egg sponge mix
Red butter icing (see below)
Strawberry laces
Mini-marshmallows
Black icing tube


For the red butter icing:
1 tbsp butter, softened
100g icing sugar, sieved
1 to 2 tbsp boiling water
Few drops of red food colouring


Place all the ingredients in a bowl and mix, adding a little more icing sugar if necessary, until you have a stiff icing.

To make the spiders: 
Make up the two-egg sponge recipe, and put into 12 cupcake cases in a cupcake baking tray. Cook at 180 degrees C, Gas Mark 4, for 12 mins. Leave to cool.
When cool, spread the top of each cupcake with the red icing. Stick on as many marshmallow eyes as you like, using the black icing to make pupils. Cut the strawberry laces and stick on for legs.
