Quince Vodka

Make this in October and leave for a couple of months. It’ll give you something to crack open around Christmas that’ll warm the soul.

900g whole quinces, grated
225g granulated sugar
Vodka


Grate the quinces and place in a 1 litre or 2 pint Kilner jar. Add the sugar and fill up the jar with vodka. Seal. Leave for at least two months, then strain and bottle (screw top or cork bottles are fine).
