Joe made these cute little mice last year for his teachers. He placed each mouse on a triangle of cardboard and wrapped it in a cellophane sheet, tied with a Christmas ribbon. This is adapted from Betty Crocker’s Christmas Cookbook.
You’ll need: Cherries, with the stalk still on and not overripe Shortbread triangles 100g milk chocolate Sliced almonds Milk chocolate chips Ready-made yellow and red icing tubes Wash and thoroughly dry cherries. Melt the chocolate gently in a microwave or over a pan of boiling water. Holding a cherry by the stalk, dip it completely into the melted chocolate and remove. Place on top of a shortbread triangle with the stalk at the back and slightly up to create a tail. Place 2 sliced almonds at the front for ears, and using the melted chocolate as glue, place a chocolate chip on to the bottom of the almonds to form the face. Pipe on two eyes with the yellow icing tube and a mouth using the red tube. Leave to cool. These won't keep, so eat within a couple of days.
