This dish looks lovely - just one question. I see from your first photo that the egg yolks remain whole. In your description you talk about mixing the eggs in briefly - do you do that like scrambled egg so that the egg yolks and whites get mixed up, or do you try to keep the yolks separate and whole?
My only tip for courgettes is like your second suggestion but with the addition of grated lemon rind and juice which peps them up. |
