Lemon does seem to enhance every flavour, though I've never tried it on pears before (but I will do as soon as I get home tonight!). Elizabeth David wrote in one of her books (the Omelette one, I think) about how people used to scrape the zest off with hard sugar lumps to cook with. And we used to do just that when I was a kid - stuff big sugar lumps into the centre of lemons and oranges and then suck and crunch them up. It was delicious, though a tad more unhealthy than pouring the juice over pears! |

It is great to find a recipe which needs unripe pears. We have two trees which provide plenty of these. This sounds so refreshing and simple, and there's no lengthy poaching required. Thanks, Joe. |
